Cafe Mom

I joined cafe mom this week. It has been a great help to me, especially the group "potty training just for boys." My son is now 21 months old and we have begun potty training. If you've already been there or are working on it now, you know how frustrating it can be. It's so good to talk to other moms who know exactly what I'm going through. For every problem I have with my son, several other moms are dealing with, or have dealt with, the same issue. Plus you have an even bigger cheering section for successes and people to listen if you need to vent. I'm really having fun on cafe mom.

Seafood is Definitly "Good Eats"

You can probably tell by this title that I really like Alton Brown from the food network. I love how he give you new ideas for all different types of food. This morning I watched his show on frozen crab (I had tivo'd it) where he changed the traditional crab cakes recipe into crab fritters. Boy did these look good. Here's the recipe:

Crab Fritters

1 cup lump or backfin crabmeat

1 cup special crabmeat (small pieces white crabmeat)

1/2 cup mayonnaise

1/2 teaspoon freshly ground black pepper

1/2 lemon, juiced

1 1/2 cups panko bread crumbs

Vegetable oil, for frying




If using a deep fryer, heat vegetable oil to 375 degrees F.

In a bowl combine the crabmeat, mayonnaise, and pepper. Form into
either 1-ounce balls for fritters or into 3-ounce cakes. Roll in the
panko to evenly coat. Deep-fry the fritters in until golden brown,
about 5 to 7 minutes or pan-fry the cakes in 1 to 2 inches of 375
degree F vegetable oil until golden brown and flip to brown on the
other side about 3 to 4 minutes per side. Drain both on a tray lined
with paper towels. Serve immediately.

Now as good as this sounds, I think I would change it up a bit. Put my own touches to it, you know?

For starters, I would make my own bread crumbs by just slowly baking sliced bread until it's golden brown all over then using my mini food processor to grind it up along with some grill seasoning. I think the seasoned bread crumbs would be great on these fritters.

For me, I would have to add little bit of veggies into the mix. Not too much, I don't want to over power the crab meat. I'm thinking just a little finely chopped broccoli and carrots would do just nicely.

Of course, I'd want to use domestic seafood. With so many recalls on foods lately I think it's pretty important to know where your foods come from and that the foods you eat, especially seafood, are local and fresh.

I think that this dish and my additions would make a great contender for a cook off. The Great American Seafood cook off is coming up on August 2-3 in New Orleans. I can hardly wait to see what these 14 chefs can do. One of their challenges is to create a dish that would be easy for an everyday person to recreate at home. They also stress the importance about knowing the source of your seafood.

Cheeseburger Pizza

Here’s a quick dinner for any night of the week. Now, I
don’t measure out seasonings very often so all that are mentioned here are to
be added to your taste.

Here’s What You Need:

  • Approx. 1 pound Ground Beef (you may have some left over)
  • Approx. 2 cups shredded cheddar cheese
  • Fresh grated Parmesan cheese- maybe ¼
  • Garlic salt
  • Montreal Steak seasoning
  • Dried Basil
  • Pillsbury roll out pizza dough – thin crust
  • 1 jar pizza sauce


Here’s What to Do:

Brown
your ground beef, drain, and cool. (to cut down the fat - rinse the
meat) Lightly grease a baking sheet for your pizza dough. Roll out your
dough onto the pan. Grate the Parmesan cheese over the dough. Grate
just enough to lightly cover the pizza. Next, add garlic salt and basil
evenly over the dough. Now that your ground beef is cool enough to
handle, crumble that over the whole pizza. Now you’ll add the Montreal
steak seasoning evenly over the crumbled meat. Top with the shredded
cheddar cheese and cook according to the pizza crust directions.

Allow
your pizza to cool and cut into squares. Heat your pizza sauce in the
microwave and serve in individual dipping bowls. As you eat, dip your
pizza in the sauce.

This was a great and quick meal. It also
goes over really well with kids/picky eaters. Everything tastes better
when you get to dip it!

Cooking Experiment Gone GOOD!

I was cooking dinner a couple of nights ago and had decided to cook green beans as my side dish. I had some canned mushrooms leftover in the fridge from the night before that I needed to use soon, so I figured I’d make kind of a make-shift green bean casserole on the stove. My wheels were turning as I got out butter and flour to make a roux. I used about a tablespoon of each and then added some milk to make the sauce. I was trying to make my own cream of mushroom soup.

Once the sauce had thickened and reduced a little, I stirred in some frozen green beans. * Keep in mind that I don’t usually measure anything out. I just go with an amount that looks right for what I’m trying to accomplish – in this case just 2 servings.

I let my concoction bubble away on medium low heat for a few minutes – to cook the green beans. Next, I added some fresh grated Parmesan cheese and stirred that in until the cheese had melted. At that point my cream of mushroom soup seemed a little more like an Alfredo sauce, but I liked where this was headed so I kept going. I figured, as long as I like all the ingredients I’m putting in here then I’ll be happy with the end result.

Boy was I! I added salt and pepper to taste and served up my creation with a healthy sized topping of more grated Parmesan cheese. It was a success! This stove top casserole was really great, and I am definitely making again very soon.

What Won't They Do To Get Attention?

So I've been babysitting lately to earn some extra money, and this has been such an enlightening experience. It has shown me that kids will do anything for attention! It's actually comical when you think about it(most of the time at least).

Tonight one of the girls that I keep (she's 3) says that she is throwing up. Now I'm looking right at her and of course there's no puke in sight, she has perfect color in her cheeks, and doesn't look the slightest bit sick.

"You're throwing up?" I asked.

"Yes, I'm throwing up." she answers.

"Where?" I ask her and she points to her belly.

So I say," Oh! Your tummy feels bad. You feel sick!?"

She says,"Yes. Yes. I'm sick." So I tell her that if she's sick, she needs to lie down to sleep. Boy that did it! She jumped up (she had been sitting in a chair) and said she wasn't sick and didn't want to go to sleep.

Amazing! Fake being sick to get attention. The problem was, that when she's here she shares my attention with two others that are younger than her(my son and her sister). Isn't that always the way? If they think someone else is getting attention that they want, they do something - anything - to get the focus back on them. It's just too cute! I guess it normal though. Every child goes through this egocentric stage around this age where they think they're the only person on the planet. They almost always grow out of it by adulthood, and we get some good laughs out of it from their attention getting tactics.

The Healing Powers of Honey and Cinnamon

Besides being really yummy when added to almost anything, would you have ever thought that honey and cinnamon could be used to cure a lot of different ailments? This is pretty neat. I'm going to be trying a few of these out.

  1. Bladder Infections: Take two tablespoons of cinnamon and one teaspoon of honey in a glass of luke warm water and drink it. It destroys the germs of the bladder.
  2. Cholesterol: Two tablespoons of honey and three teaspoons of cinnamon mixed in 16 ounces of tea water, if given to a cholesterol patient, it reduces the level of cholesterol in the blood by 10% within 2 hours. If taken 3 times a day any chronic cholesterol is cured.
  3. Cold and Cough: Those suffering from common or severe colds should take one tablespoon lukewarm honey with 1/4 teaspoon cinnamon daily for 3 days. This process will cure most chronic cough, cold and clear the sinuses.
  4. Heart Diseases: Make a paste of honey and cinnamon, apply on bread instead of jelly and jam and eat it regularly for breakfast. It reduces the cholesterol in the arteries and saves the patient from heart attack. Also those who have already had an attack, if they do this process daily, are kept miles away from the next attack. Regular use of the above process relieves loss of breath and strengthens the heart beat.
  5. Acne: Three tablespoons of honey and one teaspoon of cinnamon powder paste. Apply this paste on the pimples before sleeping and wash it next morning with warm water. If done daily for two weeks, it removes pimples completely.
  6. Weight Loss: Daily in the morning, 1/2 hour before breakfast on an empty stomach and at night before sleeping, drink 2 tablespoons of honey with 1teaspoon of cinnamon boiled in one cup water. If taken regularly it reduces the weight of even the most obese person. The honey and cinnamon aids in digestion and rids body of stomach related disorders. Take care that you also eat sensibly a balance nutritional diet. % small meals are better than 3 large ones and soups are a great substitute.
  7. Bad Breath: People of South America, first thing in the morning gargle with one teaspoon of honey and cinnamon mixed in hot water. So their breath stays fresh throughout the day.
  8. Toothache: Make a paste of one teaspoon of cinnamon and five teaspoons of honey and apply on the aching tooth. This may be done 3 times a day daily till such time that the tooth has stopped aching.
  9. Arthritis: Take one part honey to two parts of lukewarm water and add a small teaspoon of cinnamon, make a paste and massage it on the itching part of the body slowly. It is noticed that the pain recedes within a minute or two. Or arthritis patients may daily, morning and night take one cup of hot water with two spoons of honey and one small teaspoon of cinnamon. If drunk regularly even chronic arthritis can be cured.
  10. Hair Loss: Those suffering from hair loss or baldness, may apply a paste of hot olive oil, one tablespoon of honey, one teaspoon of cinnamon before bath and keep it for approx. 15 min. and then wash the hair. It was found to be very effective.

Rainy Day Reading

Looking for something to read on a rainy day, but haven't made it to the library this week? Me too. I have this problem quite a bit. It rains almost everyday during July and August here and with gas prices going up, up,up, I don't make those extra outings -like going to the library- as much. What I do is just make my own book.

There are so many sites with free e-books out there that I can make any kind of book I want. I can put a few short stories together to print out or even print out a full length novel. I can also just read the stories/books right from my computer. That sure does save on my paper and ink. I've got a whole folder on my internet favorites for free e-book websites. They're great! Now all I have to do on a rainy day is just log on to the internet and there they are - all the books I could possibly want. Kids, fiction, non-fiction, self help, education - I can read anything I want. The kid's stories keep my son very well occupied for a while. If you want to find some of these sites too, just type "free e-books" in the search bar and take your pick. Or, you can try one of the ones listed below.

Two Dollar Bill

I am STILL laughing!! I think we need to quit saving our $2 bills and bring them out in public. The younger generation doesn't know they exist.

On my way home from work, I stopped at Taco Bell for a quick bite to eat. In my billfold are a $50 bill and a $2 bill. I figure that with a $2 bill, I can get something
to eat and not have to worry about anyone getting irritated at me for trying to break a $50 bill.


Me:
"Hi, I'd like one seven-layer burrito please, to go."

Server:
"That'll be $1.04. Eat in?"

Me:
"No, it's to go." At this point, I open my billfold and hand him the $2 bill. He looks at it kind of funny.

Server:
"Uh, hang on a sec, I'll be right back."

He goes to talk to his manager, who is still within my earshot. The following conversation occurs between the two of them:


Server:
"Hey, you ever see a $2 bill?"

Manager:
"No. A what?"

Server:
"A $2 bill. This guy just gave it to me."

Manager:
"Ask for something else. There's no such thing as a $2 bill."

Server:
"Yeah, thought so."

He comes back to me and says, "We don't take these Do you have anything else?"


Me:
"Just this fifty. You don't take $2 bills? Why?"

Server:
"I don't know."

Me:
"See here where it says legal tender?"

Server:
"Yeah."

Me:
"So, why won't you take it?"

Server:
"Well, hang on a sec."

He goes back to his manager, who has been watching me like I'm a shoplifter, and says to him, "He says I have to take it."


Manager:
"Doesn't he have anything else?"

Server:
"Yeah, a fifty. I'll get it and you can open the safe and get change "

Manager:
"I'm not opening the safe with him in here."
Server:
"What should I do?"

Manager:
"Tell him to come back later when he has real money."

Server:
"I can't tell him that! You tell him."

Manager:
"Just tell him."

Server:
"No way! This is weird. I'm going in back."

The manager approaches me and says, "I'm sorry, but we don't take big bills this time of night."


Me:
"It's only seven o'clock! Well then, here's a two dollar bill."

Manager:
"We don't take those, either."

Me:
"Why not?"

Manager:
"I think you know why."

Me:
"No really, tell me why."

Manager:
"Please leave before I call mall security."

Me:
"Excuse me?"

Manager:
"Please leave before I call mall security."

Me:
"What on earth for?"

Manager:
"Please, sir."

Me:
"Uh, go ahead, call them."

Manager:
"Would you please just leave?"

Me:
"No."

Manager:
"Fine -- have it your way
then."


Me:
"Hey, that's Burger King, isn't it?"

At this point, he backs away from me and calls mall security on the phone around the corner. I have two people staring at me from the dining area, and I begin laughing out loud, just for effect. A few minutes later this 45-year-oldish guy Comes in.


Guard:
"Yeah, Mike, what's up?"

Manager (whispering):
"This guy is trying to give me some (pause) funny money."


Guard:
"No kidding! What?"

Manager:
"Get this .. A two dollar bill."

Guard (incredulous):
"Why would a guy fake a two dollar bill?"

Manager:
"I don't know. He's kinda weird. He says the only other thing he has is a fifty."

Guard:
"Oh, so the fifty's fake!"

Manager:
"No, the two dollar bill is."

Guard:
"Why would he fake a two dollar bill?"

Manager:
"I don't know! Can you talk to him, and get him out of here?"

Guard:
"Yeah."

Security Guard walks over to me and......


Guard:
"Mike here tells me you have some fake bills you're trying to use."

Me:
"Uh, no."

Guard:
"Lemme see 'em."

Me:
"Why?"

Guard:
"Do you want me to get the cops in here?"

At this point I am ready to say, "Sure, please!" but I want to eat, so I say "I'm just trying to buy a burrito and pay for it with this two dollar bill.

I put the bill up near his face, and he flinches like I'm taking a swing at him. He takes the bill, turns it over a few times in his hands, and says, "Hey, Mike, what's wrong with this bill?"


Manager:
"It's fake."

Guard:
"It doesn't look fake to me."

Manager:
"But it's a two dollar bill."

Guard:
"Yeah?"

Manager:
"Well, there's no such thing, is there?"

The security guard and I both look at him like he's an idiot, and it dawns on the guy that he has no clue.

So, it turns out that my burrito was free, and he threw in a small drink and some of those cinnamon thingies, too.

Made me want to get a whole stack of two dollar bills just to see what happens when I try to buy stuff. If I got the right group of people, I could probably end up in jail. You get free food there,too.

Something For My Fellow Bloggers

Times are getting hard folks, and money stays tight. I have found a way to make a little extra cash while doing something I love - Blogging! Shopwiki Sports

Ok, so I know other moms are up against this too - My boyfriend is completely set on our son playing football (never mind the fact that he's not even two yet). So we look online for different things to peak our son's interest in football and found team sports on SHOPwiki. Anybody else seen this? SHOPwiki shows you online stores from everywhere, even the small privately owned stores not just big stores that pay for advertising.

So, they have sections for all different sports: Baseball, Basketball, etc. and of course, Football.
They had some great stuff! There was even a short description of the sport and the players. All the sub-categories also had a buying guide with it to give you tip what to buy based on age, league, etc. For our son we searched the buying guide for footballs and opted for a 7" foam football and some foam football theme stickers for his room. Best thing is, we don't have to pay some outrageous amount for this stuff. Since SHOPwiki team sports lets you shop from a wide range of stores both big and small, you can comparison shop much easier and get the best price.

These things will do for now, but when the time comes, we'll use this site again for good deals on sports equipment. For now it's just fun watching them play together and my boyfriend trying to teach our son how to throw and catch the football.

In Shakespeare's time, mattresses were secured on bed frames by ropes. When you pulled on the ropes the mattress tightened, making the bed firmer to sleep on. Hence the phrase "goodnight,

It was the accepted practice in Babylon 4,000 years ago that for a month after the wedding, the bride's father would supply his son-in- law with All the mead he could drink. Mead is a honey
beer and because their calendar was lunar based, this period was called the honey month we know today as the honeymoon.


In English pubs, ale is ordered by pints and quarts. So in old England, when customers got unruly, the bartender would yell at them mind their own pints and quarts and settle down. It's where we get the phrase "mind your P's and Q's"

Mean Moms

Someday when my children are old enough to

understand the logic that motivates a parent, I will

tell them, as my Mean Mom told me:

I loved you enough . . . to ask where you were going, with whom,and what time you would be home.

I loved you enough to be silent and let you discover that your new best friend was a creep.

I loved you enough to stand over you for two hours

while you cleaned your room, a job that should have taken 15 minutes.

I loved you enough to let you see anger,

disappointment, and tears in my eyes.

Children must

learn that their parents aren't perfect.

I loved you enough to let you assume the

responsibility for your actions even when the

penalties were so harsh they almost broke my heart.

But most of all, I loved you enough . . . to say

NO when I knew you would hate me for it.



Those were the most difficult battles of all. I'm

glad I won them, because in the end you won, too.

And someday when your children are old enough to

understand the logic that motivates parents, you will tell them.



Was your Mom mean?

I know mine was.

We had the meanest mother in the whole world!

While other kids

ate candy for breakfast, we had to have cereal, eggs, and toast.

When others had a Pepsi and a Twinkie for lunch, we had to eat sandwiches.

And you can guess our mother fixed us a dinner that was

different from what other kids had, too.



Mother insisted on knowing where we were at all

times. You'd think we were convicts in a prison. She

had to know who our friends were, and what we were

doing with them. She insisted that if we said we

would be gone for an hour, we would be gone for an hour or less.



We were ashamed to admit it, but she had the nerve

to break the Child Labor Laws by making us work.

We had to wash the dishes, make the beds, learn to cook, vacuum the floor, do laundry,

empty the trash and all sorts of cruel jobs.

I think she would lie awake at night thinking of more things for us to do.



She always insisted on us telling the truth, the whole truth, and
nothing but the truth. By the time we were teenagers, she could read
our minds and had eyes in the back of her head. Then, life was really
tough!



Mother wouldn't let our friends just honk the horn

when they drove up. They had to come up to the door so she could meet
them. While everyone else could date when they were 12 or 13, we had to
wait until we were 16.



Because of our mother we missed out on lots of

things other kids experienced. None of us have ever

been caught shoplifting, vandalizing other's property or ever arrested for any crime.

It was all her fault. Now that we have left home, we are all educated,

honest adults.We are doing our best to be mean

parents just like Mom was.



I think that is what's wrong with the world today.

It just doesn't have enough mean moms!

Healthier Eating Habits for Our Kids

Anyone seen the "Little King" Burger King commercial? Burger King is joining in on the challenge of getting kids to eat healthier by introducing apple fries - fresh apples cut into the shape of french fries. I think this is great. Just because you have that occasional, time- saving fast food meal doesn't mean you and your kids can't choose healthier foods.

Eating healthy is something we all want our kids to value, but sometimes it's hard to do. Sometimes giving in to the tantrum for a hot dog and fries is easier and less time consuming than preparing a healthy meal that your kids turn up their noses at.

So, what do we do?

  1. Try Burger King's idea with the apple fries - a healthy food cut into a fun shape might just do the trick.
  2. For fresh veggies try cutting different, bright colored veggies into sticks(ie: carrots;celery; peppers-red,green,oryellow;etc.) and set up an assembly of different dips to try- ranch, cheese,etc.
  3. Use sauces or casseroles to camouflage vegetables. It might sound sneaky, but all's fair when you're trying to get your kids to eat healthy. Plus, you can gradually cut back on the sauce or add more veggies to the casserole as they get used to eating them.
  4. Let your kids help cook. They can stir or mix things, shred lettuce for salads, assemble kabobs,the list goes on. Depending on your child's age, they can even help chop veggies for the meal. There are lots of kid safe cooking utensils you can buy to help teach your child the proper way to prepare healthy foods.
